Quick Overview

The grapes are hand-picked and all the following operations aim to mantain the grape's integrity, which are still macerated for 12/14 days, while the must ferments in steel containers, at a temperature of 26/28°C; at the end of the fermentation, there has been a 12 days-long skin contact maceration with controlled temperature (25/27°C). Afterwards, the wine is purified and poured into steel tanks where, with controlled temperature and the graft of the selected bacteria, we wait for the end of the malolactic fermentation. The ageing occurs in barriques and wooden barrels for 2 years. After that, the ageing goes on, keeping the wine in stainless steel containers till the bottling. The wine is sold after ageing in bottle for 4 months.
